For the Postman’s Favorite Cookies, beat eggs with sugar, salt and vanilla sugar over steam in a mixing bowl until warm, about 40°C, then beat until cold. Mix in sifted flour, baking powder and finely chopped fruit. Fill into a piping bag with a hole nozzle and pipe elongated bars onto a prepared baking sheet.
Bake in the preheated oven at 170 to 180°C for 10 to 12 minutes until light brown. While still warm, cut the Postman’s Favorite Cookies into finger-thick pieces, place on a baking sheet and briefly overdry again at 150°C in the oven on sight.
