Chop the young, fresh spinach very finely and place in a coarser linen cloth or diaper. Twist the cloth tightly enough to squeeze out the juice. Collect the juice as you do so. Then slowly heat the spinach juice in a container in a water bath until the yellow spinach water separates from the so-called spinach pot. Using a very fine sieve, separate the water from the spinach pot.
