Mix yeast, curry, flour, one tsp. salt, sour milk and lukewarm water with the dough hook of the hand mixer for 5 min. Leave to rise for approx. 30 min. with the lid closed.
Cut onions into slices. Clean mushrooms and cut into slices. Clean chanterelles, cut the large ones in half.
Brush a frying pan with a little oil. Pour three tablespoons of batter into the frying pan. Bake for about 3 minutes on each side.
Oil the frying pan in between. Keep the cakes warm.
Heat one tbsp. oil in a second frying pan. Sauté onions and mushrooms for 5 min. Add chanterelles. Sprinkle with juice of one lemon, add sour cream. Season with salt and cayenne pepper. Cover and steam for 5 minutes. Cut tarragon into strips and fold in. Season to taste.
Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
