Instructions:

Sauté shallots and apple in clarified butter until soft. Add sauerkraut, extinguish with cider, season with thyme, caraway, juniper, bay leaf, salt and pepper. Pour in chicken or meat broth. Sixty minutes at low temperature gently simmer.
