Beat egg yolks and sugar until creamy. Add lemon zest and cinnamon. Drain cherries well. Add to the egg mixture. Sift grated bread and stir in as well. Beat egg whites until stiff peaks form. Mix carefully. Grease gratin dish with butter. Put into the oven. Bake for about 70 minutes. After 25 minutes put paper on top.
Electric stove: 180 degrees
Gas stove: level 3
Take out of the oven. Serve dusted with powdered sugar.
