Place onions, meat, parsley, allspice (new spice), pepper and salt in a large bowl and mix thoroughly.
Divide into portions, netting hands and forming each piece into a sausage around a wide, flat skewer.
Brush each lightly with oil and grill for 10-15 min, over charcoal if possible, turning skewers from time to time.
Bring kofta to table with lemon pieces and a bowl of ground sumac for sprinkling.
