For the grilled mackerel with gooseberry sauce, we’ll start with the sauce, since the fish should be served hot and right out of the frying pan.

For the gooseberry sauce, clean the berries first. Then lay them flat in a small roasting pan and cover with water. Add the sugar and cook the berries until they are soft. Strain the soft gooseberries through a sieve.

Now rinse the fresh mackerel, clean it. Rub the inside of the fish with salt, pepper and juice of one lemon, then close and score each 4 times crosswise. Brush with melted butter and cook under the broiler until done. Turn to the other side in between.

Serve the mackerel with gooseberry sauce very hot with lemon slices and parsley. Serve the sauce separately with the fish in a small bowl.

Preparation Tip:

If fresh gooseberries are not available, boiled or frozen berries can also be used. In this case, adjust the amount of sugar and water accordingly.
