For the beet goat yogurt, steam the beets at 100 degrees for about 50 minutes, depending on their size.

Then peel and cut into small cubes. Mix with the yogurt and season with chopped fresh mint, dried mint, salt and pepper.

Leave to infuse in the refrigerator for at least an hour and serve the beetroot-goat yoghurt with fresh mint leaves.
