Peel shallots and garlic, chop. Pluck sage leaves. Cut 3 leaves into strips.
Rinse meat, dry and pound tenderly flat. Place 1 slice of ham and remaining sage leaves on each. Pin with wooden skewers. Fry in hot oil on both sides for about 2 min. Season with salt and pepper. Take out.
Sauté shallots and garlic in the frying fat until soft. Deglaze with wine and whipping cream, bring to a boil. Mix in sauce thickener. Season with pepper, salt, juice of one lemon and sage strips.
