Instructions:

For the asparagus muffins, first peel the asparagus, cut away the woody end pieces and cut into small pieces. Bring salted water with a pinch of sugar and a small piece of butter to a boil and cook the asparagus pieces in it.

Cut the bacon into small pieces and fry it in a pan. Mix eggs and oil until foamy, add cream. Mix flour with some baking soda and add little by little. Add salt and pepper.

Mix in the bacon, chopped cheese and the asparagus pieces. Pour into a greased muffin tin, or use muffin tins. Bake at 170 °C on the lowest rack for about 25 minutes. Then finish baking on the middle rack for about 10 minutes.

Carefully remove the asparagus muffins from the muffin tin.

The asparagus muffins taste great warm or cold.
