Adobo is the term used throughout the Spanish-speaking world to describe an entire family of dishes with marinated pork. In Mexico, the term is used for a fiery marinade with chipotle chollies (smoked jalapenno chilies). Chipotles are dried and sold in cans (pickled in tomato sauce.
