Brown the peanut kernels in the hot peanut oil in just under 10 min. while stirring. Together with the chopped onion, chopped garlic, fennel seeds and chili in a mortar or hand blender to a smooth paste. Add the remaining spices and the lime juice, then gradually stir in the coconut milk. Bring the peanut sauce to a simmer for 2 minutes and season.

Serve with: Chicken or meat skewers.
