For the baked cauliflower, rinse, clean and cut the cauliflower into roses. Cook in boiling hot, lightly salted water for about 10 minutes until al dente.

Heat the butter and add the flour. Pour in milk and carfioli soup. Season with salt and a pinch of nutmeg. Mix egg yolks with whipping cream and add to the sauce while stirring, do not boil anymore.

Turn the cauliflower first in the sauce, then in breadcrumbs and beaten egg. Fry in oil at 175 °C. Serve the baked cauliflower.

A homemade tartar sauce tastes great with the baked cauliflower.
