Instructions:

For baked cherry compote with nectarines, first preheat the oven to 180 °C. Sort the cherries, wash and pit them. Wash and pit the nectarines and cut into narrow wedges.

Mix cherry juice, rum, starch and sugar in a bowl and pour into a baking dish (approx. 30×20 cm). Spread cherries in it, stir briefly. Place the dish in the preheated oven and “bake” the compote until the liquid bubbles and the cherries are nice and soft and crumbly – this takes about 20 minutes.

Remove pan from oven, spread nectarine wedges on top of cherry compote, drizzle with some of the broth and sprinkle with 1 tsp vanilla sugar. Put compote back in the oven and let it bake for another 10-15 minutes.

Baked cherry compote with nectarines is best enjoyed warm.
