Rinse the zucchini, trim the ends and grate finely. Chop the onion very finely.

Rinse the mint, chop half. In a baking bowl, mix the zucchini, onion, crumbled feta, chopped mint, bread crumbs and the eggs, season with salt and season with pepper. When the mixture is well combined, form 12 small balls and flatten slightly.

In a non-stick frying pan, heat the olive oil and fry the morsels in it for 3-4 min on each side until golden brown. Remove with a slotted spoon and drain on kitchen roll.

Serve warm with tomato or cucumber salad.
