For the baked pumpkin with taboulé, first rinse the bulgur in a colander with cold water. Then bring the fresh water to a boil and add the bulgur. Cook for about 10 minutes (or according to package directions) and then let cool.

Meanwhile, preheat the oven to 180 °C and line a baking sheet with baking paper.

Cut pumpkin into quarters (for one large pumpkin) or halves (for 2 small pumpkins). Scrape out seeds with a spoon. Place squash on baking sheet, drizzle with a little oil and place in oven for about 30 minutes until tender.

In the meantime, wash and chop tomatoes and cucumber. Wash the young onions and cut them into fine strips. Wash, dry and chop the parsley and mint.

Mix all ingredients for the taboulé and let it sit until the pumpkin is ready.

Remove pumpkin and spread taboulé on top.
