Instructions:

For the veal roast, rub the meat well all around with salt and pepper and sear all around in oil. Then remove from the casserole.

Peel and coarsely chop the carrots, garlic and onion and fry them briefly in the casserole. Deglaze with soup, add tomato paste, put meat back in.

Add thyme and rosemary, pour in wine. Braise in the oven at 150 °C for 2 hours, turning once. Remove meat from pot and let rest.

Strain juice, reduce slightly in a saucepan, bind with flour and boil away for 3 minutes. Cut the meat and serve with the juice and a few pieces of carrot.
