Instructions:

For briami (Greek oven vegetables), cut the well-washed melanzani, zucchini and potatoes into slices about 1/2 cm thick. Blanch (briefly scald) the tomatoes, remove the skins and cut half of them into small cubes. Remove the stems from the peppers, remove the seeds and cut into strips. Clean the green beans, cut into pieces and blanch briefly in salted water.

Place the vegetables in layers in an ovenproof dish, sprinkle coarsely chopped parsley between them and salt and pepper each layer. Slice remaining tomatoes and place on top to finish. Sprinkle the plucked oregano on top. Crush garlic with a little olive oil in a mortar and sprinkle over tomatoes.

Season with freshly ground sea salt and pepper. Bake in a preheated oven at 180°C for about 30 minutes, covered with aluminum foil. Then remove the foil, sprinkle with some crumbled feta if desired and bake the briami for another 20 minutes.
