Clean the broccoli and rinse briefly, then cut into bite-sized pieces and put in enough boiling salted water form. Cook for about 10 minutes, then remove and drain.

Mix the crème fraîche with the eggs and the grated Emmentaler and season the mixture with nutmeg, pepper and salt. Grease a large, shallow baking dish with a little butter and sprinkle with breadcrumbs. Place the broccoli pieces in it and pour the egg mixture over them. Spread the rest of the butter evenly on top in flakes. Bake the flan in a heated oven at 200 °C for about 20 minutes until the egg mixture has set.

Bake in a gratin dish. Then reduce the baking time to 12-15 min, depending on the height of the filling. The mixture will take longer to set in a high dish than in a shallow dish.
