Chop the bones, remove the fat and marrow and brown them in the stove on the tray at 200 °C. Pour off the fat and put the bones in a large saucepan and pour the water over them. Bring to a boil and skim off the foam well. Coarsely chop the onions, carrots, leeks and celery and roast them in a little bit of fat until they get color. Drain the fat, add the vegetables, spices and peppercorns to the bone broth form.tomatoes and mushrooms (can also be the leftovers from cleaning). Cook for about 8 hours, skimming in between if necessary. If too much water has evaporated, fill up repeatedly in between.
