For the buttermilk soup with pears, peel and core the pears and cut into small cubes.
Boil them with a little water, sugar, clove and cinnamon stick until soft. Mix the cold buttermilk well with the cornstarch and bring to the boil.
Beat constantly with a whisk. Then stir in the pear pieces as well.
Season with a pinch of salt, some finely grated lemon peel and sugar and serve the buttermilk soup with pears.
