Instructions:

For the cucumber noodles with pointed peppers and goat cheese, first cut/slice cucumber into thin oblong strips and salt. Refrigerate for 5 minutes and then squeeze out the juice, collecting it. Then set aside again.

Mix the cucumber juice with honey, balsamic vinegar, olive oil and garlic, season with salt and pepper and marinate the cucumber strips in it.

Coarsely chop the almonds and roast them briefly in a pan without fat.

Mix pointed peppers with all ingredients and bake in preheated oven at 180 °C top/bottom heat for 10-12 minutes. Then peel off the skin, cut in half and remove the seeds. Cut half of the peppers into strips and blend the other half into a cream. Season to taste with salt and pepper.

Arrange on a plate cucumber noodles with pointed peppers and goat cheese and the toasted almonds.
