For the cucumber raita, wash the cucumber and remove most of the peel with a peeler. Some of the peel may remain. Cut into small cubes and mix with yogurt, cumin and paprika powder. Season with salt and pepper.

Roughly chop the mint and mix into the cucumber raita. Leave to infuse in the refrigerator for about half an hour and serve the cucumber raita chilled.
