Instructions:

Peel the cucumber whole or wash very well and peel at 1 cm intervals. (The cucumber retains a little more bite this way and looks more decorative).

Slice or shave into very thin slices. Sprinkle heavily with salt and refrigerate for at least 30 minutes.

Place in a colander, drain off any water that has escaped and squeeze cucumber well.

Mix garlic and ginger with the yogurt. Mix in cucumbers and season with salt as well as white pepper.

Refrigerate again, if possible, before serving. Stir again briefly immediately before serving.
