Instructions:

For the earth apple chard soup, carefully wash chard, remove coarse stems, chop into strips.

Finely dice peeled potatoes. Cut cleaned leek into fine rings. Sauté leek and pressed garlic clove with butter until translucent.

Add potatoes and chard and cook briefly. Dust with flour. Pour in hot soup, cook the soup in a closed pot for about 20 minutes.

Coarsely puree the soup with a hand blender. Season to taste with nutmeg, salt, pepper and soy sauce. Stir in the whipped cream just before serving.

Sprinkle the potato-mangold soup with plucked marjoram leaves and grated cheese. Serve with crusty farmhouse bread.
