The liquid must taste good at last. In the meantime, soak the champagne bottles in cold water for 24 hours, then rinse them with hot water and drain them upside down. Clean the plastic corks in hot water. Pour the liquid from the glass jar into a pitcher through a dishwasher. Fill each bottle with the liquid to about three finger widths below the rim, seal. Secure the stoppers with florist’s wire. Put the bottles in the cellar. The bottle fermentation, which starts now, lasts at least 8 days, after which you can taste the elderberry sparkling wine for the first time. It will keep in the bottles for years.
