For the fruit tiramisu, first wash the strawberries and nectarines. Remove the seeds from the nectarines and dice them. Remove the stems from the strawberries and cut them into quarters or eighths, depending on their size. Peel and dice the kiwi. Pluck lemon balm, wash if necessary and chop finely. Squeeze the juice from the lemon.

Mix fruit with remaining ingredients. Refrigerate for at least 1-2 hours.

In the meantime, beat yolks with the two sugars until foamy. Add mascarpone.

Beat egg whites until stiff peaks form and gently fold in.

Line a baking dish with the biscuits, pour some of the fruit marinade over them and place layer after layer of fruit and mascarpone cream on top. Repeat until everything is used up and the mold is full.

Chill the fruit tiramisu for at least 2 hours before serving.

Preparation Tip:

The fruit tiramisu can also be prepared in several small ramekins.
