Instructions:

Provide desired amount of high quality cooking oil and peel the yellow peel from the appropriate number of unsprayed organic lemons with a very sharp knife.

Put the peel in a large jar, fill with the oil, leave in a bright, warm place for two weeks, stirring frequently.

Then pour the oil through a close-meshed sieve and bottle. Store protected from light.

Preparation Tip:

When peeling, make sure that nothing of the white inside is taken. The yellow peel gives flavor and the white is bitter.
