After this delicious leaf salad, you will hardly reach for canned tuna repeatedly each time. It consists of fresh tuna cooked to perfection with tart apples and crunchy celery, dressed with a tangy mayo. I prefer to eat the leafy salad on toasted multigrain bread, topped with tomato slices and whole basil leaves.

1. Heat oil in a large coated frying pan over moderate heat. Sear the fish steaks on one side for 5 min, then carefully turn to the other side and continue frying for about 3 min. Then rest the fish in the frying pan for about 5 min.

Cut the fried fish into bite-sized pieces and combine in a large baking bowl with the celery, apples and green onions. Season the leaf lettuce with salt.

Stir mayo and basil in a small baking bowl and fold into tuna salad with a spatula.

Drink recommendation : Wine: Finger Lakes (Ny) dry Riesling.
