Instructions:

To make the curd cheese pancakes, first whisk the yolks with the milk and mineral water, stir in the curd cheese, salt and orange and lemon zest and then sift in the flour. Carefully fold the stiffly beaten snow into the dough. Now fry the pancakes in a hot pan.

For the curd pancake filling:

Stir curd cheese with eggs, cream, sugar, butter and vanilla sugar until smooth and fold in the rum raisins. Coat the pancakes with the curd mixture, roll them up and place them in a greased baking dish. Pour the milk, cream, eggs and honey over the pancakes and bake in a preheated oven at 170° C for 10-15 minutes.
