For the g’set Erdäpfel steam the potatoes, peel and cut into flakes.

Beat butter until fluffy and season with yolk, salt, sour cream and nutmeg.

Cut leftover sausage or meat into noodles and add to the rest of the mixture with the carrots. Fold in the beaten egg white and pour the finished mixture into a greased and crumbled baking dish. Sprinkle with butter flakes and more breadcrumbs and bake in the oven at 200° C for about 30 minutes.

Remove the potatoes from the oven and enjoy.
