For the guacamole eggs, first hard boil the eggs for about 10 minutes. Allow to cool and peel. Cut in half lengthwise.

Finely chop the cilantro. Cut the jalapeño into rings. Peel the avocado, remove the pit and place the flesh in a bowl. Mash with a fork. Carefully separate the egg yolks and add them. Add lime juice, salt, cilantro, jalapeños as well as crème fraîche and stir everything well.

Pour the avocado mixture back into the indentations of the egg whites. Serve the guacamole eggs sprinkled with chopped cilantro.

Preparation Tip:

Regulate the spiciness of the guacamole eggs with the amount and heat of the chilies used.
