For the ham croissants, first cut the leek lengthwise into strips and then finely dice. Sauté in butter and add the wine for 3 minutes until soft. Leave to cool. Finely dice ham and feta cheese as well.

Mix well the feta cheese, ham, leek, egg, whipped cream and spices.

Roll out the puff pastry thinly into a rectangle and cut out about 16 triangles. Place the filling on the wide side of the pastry triangles, brush the tops of the triangles with water, roll them up from the wide side and form croissants. Place parchment paper on a tray rinsed with cold water and brush the ham croissants with a little egg yolk. Bake at 225 °C for 12-15 minutes.
