Boil potatoes, peel and press through a press or grate finely.
Cream butter with a mixer until fluffy.
Put the herring flaps through a meat grinder or grind in a food processor.
Now mix herring, potatoes and butter and add 1-2 finely grated apples. Add another cup of sour cream and mix everything well.
Season with salt and pepper, arrange and sprinkle the herring cheese with a little paprika or curry and pepper to taste.

Alternatively, if you can get a herring rag for the herring cheese, use herring fillets in the brine.
