Marinade:

Sauté lemongrass, shallots and chili pepper in oil, add brown caster sugar and lightly caramelize. Add lime zest and pour in liquids. Simmer gently for about ten minutes, season with salt and freshly ground pepper, then cool the marinade. Marinate the herring fillets in it for 24 hours.

Apple Curry Salsa:

Briefly sauté shallots, mushrooms, diced apple and ginger in sesame oil. Season with pepper, salt, caster sugar and curry.
