Instructions:

Dice the meat. Heat the butter in a frying pan and brown the meat on all sides.

Add the garlic, the various spices, the onion and the soaking water of the apricots. Let the ragout bubble up, then simmer on low heat for an hour and a half until the meat is nice and tender. Add the apricots and raisins and simmer for a few minutes.

Serve with fresh dates or pear slices and wild rice.

Tip: Cook only with high-quality spices – they are the be-all and end-all of a good dish!
