Clean the leek, remove the dark green except for about 10 cm, halve the leek lengthwise, cut into strips about 2 cm wide, rinse thoroughly and drain. Clean carrots, peel, rinse, cut into slices. Peel and rinse celery, cut into cubes.

Peel and dice onion, peel, rinse and dice potatoes.

Cut bacon into cubes and fry in oil. Sauté carrot slices, celery and onion cubes in it. Add potato cubes, beef broth and sausage, bring to a boil, simmer for about ten minutes.

Add leek strips, season with salt and pepper, bring to the boil and simmer for 5 to 7 minutes.

Remove meatsausages from the stew, cut into slices, repeatedly add to the stew form. Season the stew strongly with salt and freshly ground pepper, sprinkle with parsley.
