For the linzer eyes, sift flour onto board and mix with stevia, almonds and vanilla sugar. Roughly cut butter and add.
Make a pit and add the yolks. Knead everything well. If the dough is too dry, add some egg white.
Preheat oven to 170 °C and bake for about 10 minutes. Spread with jam and assemble.

The Linzeraugen can also be made with currant jam.
