Instructions:

For the cookie dough, beat sugar, vanilla sugar, salt and butter until very fluffy and then add egg yolks. Add flour and coconut flakes and mix everything quickly to a smooth dough. Cover and let rest in the refrigerator for about 2-3 hours.

Preheat the oven to 160 °C hot air. Line a baking tray with baking paper.

Cut candied cherries in half if necessary, stir jam until smooth.

Form small balls from the dough, place them on the prepared tray and press them slightly flat. Using a wooden spoon, make a small indentation in the center of each ball and fill each with a blob of cherry jam. Then place half a cherry on each ball as a “cap” on the jam filling.

Bake the cookies in a hot oven for about 10 minutes.

In the meantime, mix coconut flakes with powdered sugar in a deep bowl. Immediately roll the underside of the still hot cookies in the coconut-sugar mixture until they are thickly coated with it.

Allow Little Red Riding Hood to cool and then store in an airtight cookie tin.

Preparation Tip:

Decorate Little Red Riding Hood with chocolate icing, sugar sprinkles or pearls instead of coconut-sugar mixture.
