Total time: 1 hour

Ingredients:

Instructions:

For the Lübecker Großer Hans, melt the butter and mix with milk and eggs, add flour and spices and mix to a dough, which is formed into a dumpling.

Dampen a cotton cloth and place it in a small bowl, dust the cloth with flour, place the dumpling in the center and fold the ends of the cloth over it, tie them loosely together with string to make a pouch.

Now boil the dumpling in a large pot with enough water for about 1 hour so that the bag floats in the pot and does not touch the bottom of the pot.

The bacon or the smoked meat is added to the pot and cooked.

The “Grosser Hans” is turned out of the linen cloth onto a plate and served with the hot potatoes and bacon.

Preparation Tip:

The "Große Hans" or, as they say in Dithmarschen, the "Dithmarscher Mehlbuedel" (=flour bag) is one of those specialties that are not missing in any cookbook from Schleswig Holstein. In addition to this hearty, spicy Dithmarsch preparation, it is also available as a sweet version made from stale bread rolls, raisins and almonds.
