Try this delicious cake recipe:

Brush a loaf pan (20 cm long) with oil and line the bottom with parchment paper. Stir water, yeast and sugar in a small baking bowl. Cover with cling film and allow to cream for 10 min. Sift flour and cinnamon into a large baking bowl, add raisins and mix. Press a bulge in the center and pour in the melted butter, syrup, malt extract (1) and yeast.

Work the dough with a kitchen knife. Knead on a floured surface for 10 minutes. Shape into a ball and place in a greased baking dish. Cover with plastic wrap and let rise for 1 hour. Roll dough through and then knead vigorously for 3 min more until dough is smooth.

Roll dough into a 20×20 cm square and roll up. Place open side down in the pan and rise, covered, for 40 min.

Preheat the oven to 180 °C. Mix the milk with the malt extract (2) and brush the dough with it. Bake for 40 min until the bread is brown. Set aside in the pan for 3 min, then turn out and cool on a cooling rack.
