Remove the peel from the mangoes, remove the seeds and dice. Remove the peel from the oranges and dice. Remove the peel from the onions and chop them.

Simmer the onions with half the vinegar over low heat until translucent. Add the mango cubes, orange cubes and raisins, stir well, bring to a boil.

Add the remaining vinegar, sugar and salt. Simmer gently for about 20 minutes, until the fruit is soft and crumbles. Add a little water if necessary.

The chutney should not become too liquid. Remove the saucepan from the stove and add the mint leaves.

Serve with: poultry, meat, fish, game.
