For the Mini Peanut Gratin with Mountain Cheese, first preheat the oven to 180 °C. Grease a muffin tin for 12 muffins well with butter.

Peel the potatoes and cut into 2 mm thin slices or shave.

Melt garlic and butter together. Add cream and season with sea salt and pepper.

Pile potato slices halfway into the dish, pour in the top mixture and sprinkle with cheese. Repeat the process.

Cover muffin tin with aluminum foil and bake in oven for 35 minutes. Remove foil sprinkle with remaining cheese and bake for another 5-10 minutes until golden.

Turn out the mini peanut gratin with mountain cheese from the ramekins, place on a plate and sprinkle with plenty of sprouts.
