For the salad, rinse and dry arugula and radicchio and pluck into bite-sized pieces. Remove the central stalk from the fennel bulb, quarter it and cut it into fine slices.

Cut spring onions and chicory into thin strips, add tomatoes. Mix the marinade, pour it over the lettuce and mix everything together nicely.

Cut the minute steaks into 1 cm thick slices (from a well seasoned rump steak). Score the edges of the fat so that the steaks do not curl during frying.
