Instructions:

Sift flour, baking powder and salt into a wide bowl. Add spices and fresh coriander. Mix thoroughly.

Divide the mixture into three parts and form into separate baking bowls. Mix the onion into the first baking bowl, the leek into the next, and the cauliflower into the third baking bowl. Add 3 to 4 tbsp of water to each baking bowl and stir the mixture until smooth each time.

3. heat the frying oil in the deep fryer to 180 °C , or until a cube of bread browns in 30 seconds. Using 2 dessert spoons, shape the mixture into balls and fry each in the oil for 3-4 min until browned. Remove with slotted spoon and drain on absorbent kitchen roll. Keep baked bhajis warm in stove until all are done.

4. Mix all ingredients for sauce and pour into a small serving bowl. Garnish with mint sprigs and bring to the table with the warm bhajis.

These small bhajis are often served as an appetizer to the main course. However, with a little bit of leaf salad and yogurt sauce, they are just as delicious an entrée.
