For the nettle foam soup, boil potatoes until soft, rinse and peel. Blanch nettle in salted water, squeeze and chop.

Pour hot vegetable soup over potatoes and nettle and puree everything. Stir in whipped cream, bring to a boil and season with salt, pepper, lemon juice, nutmeg powder.

Before serving, whip the nettle foam soup again with a blender.

Preparation Tip:

If desired, you can add some sour cream to the nettle foam soup at the end.
