For the nettle spaghetti, first prepare the nettle paste. To do this, carefully select and wash the leaves of the nettles with disposable gloves.

Fill a relatively large pot half full with water, add the nettles, boil vigorously once, lift out and immediately quench with cold ice water. Drain well. Then mince twice.

Chop pine nuts and blend with Parmesan cheese and nettles in a large blender. Gradually pour in the oil and blend until the paste has a nice creamy consistency. Season to taste with salt and pepper.

Cook the pasta according to the instructions until al dente, drain and place in a pan. Mix with the prepared nettle paste, season with salt, pepper as well as nutmeg and toss everything briefly but well.

Arrange the nettle spaghetti on warmed plates and sprinkle with freshly shaved Parmesan before serving.
