Spinach is not everyone’s cup of tea? With this recipe it is:

Cook pancakes, toast in olive oil, keep warm.

Sauté onion and garlic in oil until light yellow. Add spinach, cover and steam until soft and collapsed. Season with pepper, salt, chilies and lemon zest. Mix mint into spinach. Spread spinach evenly on pancakes, sprinkle cheese on top. Turn pancakes, garnish with a tiny bit of mint and lemon slices.
