For the pea soup, bring the soup to the boil in a saucepan and cook the peas in it for about 7-8 minutes until soft. Finely puree the peas with a hand blender and pass through a not too fine sieve.

Stir in 100 ml of the milk and the cream cheese and heat, but do not let it boil anymore. Season to taste with herb salt, pepper, nutmeg, lemon zest and a squeeze of lemon juice.

Divide the soup between 2 plates. Heat the remaining milk, add the yogurt, a pinch of salt and the mint and whip with a hand blender. Spoon over the soup and serve the pea soup decorated with a mint leaf.

Preparation Tip:

Use a homemade herb salt for the pea soup.
