For the peas brioches, defrost the peas. Put the flour in a bowl, make a well and crumble the yeast into it. Heat the milk to lukewarm and pour over the yeast with the sugar. Stir in a little flour from the edge and let everything rest covered for 15 minutes.

Wash and dry the mint and finely chop the leaves. Add the lemon zest and salt to the pre-dough and knead with the dough hook of the food processor until smooth. Add the two eggs one after the other. Gradually add the softened butter, always kneading it in completely. Finally, knead in the peas briefly, cover the bowl with plastic wrap and let the dough rise in a warm place for about 40 minutes. Then place in the refrigerator for 40 minutes.

Preheat the oven to 180 degrees (or 160 degrees convection oven). Prepare a muffin tin. Separate 3/4 of the dough and divide into 12 portions. Shape them briefly round on some flour and then place them seam side down in the muffin tin. Form 12 balls from the remaining dough as well. Press an indentation in each large ball with your index finger and place the small ball inside. Let rise for another 15 minutes.

Mix the egg yolk and milk and brush the brioches with it. Bake in a hot oven for 30-35 minutes until golden brown. Let cool briefly, remove from the molds and let cool on a rack.

The pea brioches are wonderful to take along for picnics, for example, and taste wonderful simply enjoyed with butter.
